The use of antifoams and free-flowing agents are sometimes necessary to control the production process or maintain properties during storage.

Enzymes are also used as processing aids since they are activated during the production process and inactivated in the final food product. Enzymes influence either the yield, capacity, or efficiency of food manufacturing processes; they can also influence end product properties.

Processing conditions, food composition (substrate), and required action are the selection criteria for choosing the correct enzyme. Enzymes are used in baking, beer brewing, alcohol production, and fruit processing which is well known. However, novel applications of enzymes are under development.
