Preservatives can be natural or synthetic and are used in almost all processed foods. Salt and sugar have been used as preservatives since ancient times. Preservatives can be grouped into two main categories:

  • Antimicrobials - block the growth of bacteria, molds and/or yeasts
  • Antioxidants - prevent or slow the oxidation of fats and lipids

Overall, preservatives and antioxidants are used to assure our foods are safe, appealing, and taste fresh while transported and stored throughout the country.
